The Can’t Cook Trails: Baked Potato Soup

This recipe isn’t from the The Can’t Cook Book, it’s from a book I’ve had for a long time and love; it’s called Teens Cook: What to Cook What you Want to Eat by Megan and Jill Carle with Judi Carle.

I love this book because as most of you know I can not cook. I’ve never be interested in it but I’m 23 and I need to learn how to cook for myself and for my boyfriend.

I’ve made this baked potato soup before but my sister was with me to help and guide me, this time I am home alone and craving this soup so I’m going for it. The first step calls for you to wash the potatoes and stab with a fork multiply times, simple enough! Now the potatoes have to cook in the oven at 375 degrees F for 45 mins.

Fast track to that being done…

Now the next step is to let the potatoes cool and to peel them, I didn’t really have time for that because I was hungry! So I peeled them with oven mitts on and started the pot with the milk, flour and butter. Things are starting to roll! The next step was the easiest, you cut up the potatoes and add it to the pot and let it good for a couple more minutes!

The last step to this is to grate some cheese and cook some bacon, done! You;re suppose to use cheddar cheese but I didn’t have any so mozzarella cheese was used!  The best step to come in to put it in the bowl, top it with cheese and the bacon and eat it!

This is the final product….

It tastes great, taste a lot like potatoes, you could only imagine!

The Can’t Cook Book Trails Day Three

If you have read my blog all that time then you know that last year for Christmas I got The Can’t Cook Book and I said I was over the time of having it going to try to make every recipe in there. Well I was awake at 5am and was hungry so I looked at one thing I could make.

I went with the Soft-boiled Egg with Toast aka The Granny Egg.

It was pretty easy actually, I didn’t even have the book with me. I may have burnt my toast but that’s because my toaster oven is weird I guess, the egg boiled for 5 1/2 mins to the mark because I timed it and the hardest friggen part was peeling the shell off.

I was off to a good start with peeling but all of the sudden the egg started to break and I could see the yolk. I may have had a mini heart attack because I didn’t want to fuck this up but I did it, I managed to get the shell off and put it in the bowl without breaking it in my hand and having to start all over.

Here it is…

It was pretty damn yummy, I put some sea salt and pepper on it to give it some more flavour! I love this one and will probably make this lots of times. Maybe my boyfriend will like it, but I doubt it. LOL

The Can’t Cook Book Trails Day Two.

Day number two of me trying this awesome cook book. When I was picking out something that I wanted to try cooking I couldn’t make up my mind. Some factors that came into play when I was picking were that I’m having chicken for dinner, I didn’t have some of the key ingredients and I didn’t really have enough time between lunch and dinner.

Today’s recipe from The Can’t Cook Book by Jessica Seinfeld was a choice between two different things. Oven Fries or Soft-Boiled Egg with Toast a.k.a The Granny Egg. Because my sister and I didn’t really eat anything all day long I decided to make something for both of rather then just one thing for me, I went with the Oven Fries. There are a couple different types of way you can make these fries, regular potato, parsnip fries, and carrot fries, I went with the regular fries because that was the easiest.

I started by washing the potatoes and talking on the phone with my boyfriend at the same time hoping to baby jesus (#rickbobby) that my phone wasn’t going to fall into the sink. Thankfully it didn’t, after now I was worried about not cutting off my finger cutting these potatoes while still talking on the phone, good thing is I’m a lifeguard and I know first aid if that’s what it came too. Now that I still have all 10 digits I was ready to start the actually skilled part. My boyfriend was now off the phone and I seasoned the potatoes, put the oil on the pan..oops, I wasn’t suppose to do that. I made the mistake of just going off what I thought was going to happen. I was suppose to put the fries on the pan first then drizzle the oil over them. Not to worry I used my brain for once and spread the oil all oven the pan with one fry, put the fries on and put some oil over them. Back to square one.

I put the fries into the my messed up oven and started to think! My boyfriend told me that he was coming over for dinner tonight, all that ran through my head was my sister and I worked out for almost two hours and I still was sweaty and smelly. I desperately needed a shower. I did something that I’ve always heard what you shouldn’t do while cooking, I went into the shower while the fries were cooking. Now it’s not like I left them in the oven and no one else was in the house, no, my sister was in the living room and if anything went wrong she was there to fix it. Thankfully, nothing went wrong. After a very long 30 min shower I was back down stairs and ready to do the watching of the fries.

Now my oven is messed up, the dial at the top will say that it’s at 425 but really it’s at 500. Cooking in my house is very hard and you always need to watch the food or else it will burn to shit. I thought I did a good job at watching them, as far as I could see none of the fries had black on them, they were all golden brown, but you can be the judge of that.

My sister finished hers before mine because I’m took busy writing and looking at an accident outside of my window, needless to say not one fry was left on her plate. These fries may not be the best thing to eat after a long workout but they taste prettydamn good to me.

The Can’t Cook Book Trials

If anyone knows me they know that I can’t cook, I’m actually so bad at it – well I think I am.

I have many of cook books at home that are for teens, easy instructions and with lots of pictures but I still cannot cook on my own. This is how bad I am at it, the couple of things I am good at cooking is grilled cheese, scrambled eggs, egg sandwich and a Nutella and strawberry grilled sandwich for a dessert.

For Christmas 2013 my mum got me a cook book that is called, “The Can‘t Cook Book by Jessica Seinfeld.” It’s a cookbook that you have to read in the beginning because it teaches you all the things you need to know. For example, it teaches you what a paring knife, Chef’s knife and a offset serrated knife is, the difference between all the pans you could buy in the world, and even how to cut garlic, an onion, an avocado and even how to get fresh herbs off the plant. I mean this is the cookbooks of all cookbooks.

For tonight my mum told me that it was a “fend for yourself night.” Meaning that the people who usually cook, which are my mum or my sister, are too lazy to cook and you need to make your own meal. Usually this night involves me going out with friends, microwaving something, or sticking something from a box into the oven. Tonight I decided that I would give cooking a try, plus it would cure my boredom.

I actually did two different recipes to make one meal. The first one was Pan-Roasted Chicken Breast and the second one was Smashed Red Potatoes with Chives. I know this probably sounds so simple to some of you but remember I suck and to be quite frankly I’m scared of cooking.

I started off with defrosting the chicken in the microwave since I didn’t plan this, which ruined the chicken because my microwave is so damn strong – it’s a good one. I left that there and started the potatoes since it would take the longest, it didn’t involve much work besides boiling them, smashing them with a plate to be flat then putting chives on them; the boiling is what makes it take so long. As they were boiling I started to season the chicken like the book told me and got the pan ready with the oil. Oil really? Great one to start with I know, nothing scares me more then cooking with oil. To my surprise it went well until the end when I over cooked the chicken. As I was over cooking the chicken I thought my potatoes were ready to be smashed so I drained the water and got a plate only to notice that the potatoes were still hard as a rock, I was in fact, premature like a little boy.

My mum at this point came downstairs to see how I was doing and she gave me a little advice of these century, put things in the microwave if you took them out too early. This in fact worked and I was ready to smash away, which was actually really fun. Cooking fun? Who would of knew. I plated my meal, took pictures, sent them to my boyfriend and being a 22 year old, put them on instagram. I then enjoyed my over cooked chicken and smashed potatoes.

I will try the chicken again, some parts actually tasted really well but I want the whole breast to taste good. The potatoes were excellent and I didn’t even put ketchup or butter on them like I normally would – this is a good sign. Image

My goal is to try every recipe in this cookbook and actually be able to cook by the end of the year.

Rum Balls

About a month ago when I was getting into all the Christmas stuff I was looking through a Christmas cookbook, I wanted to make something for when everyone comes over. I decided to make rum balls which was funny because the same day I was looking at the book my mum tells me that she wanted to make rum balls, I told her I was thinking the same thing. 

After work today my mum got all the ingredients so we could make them. Now I’m a really bad cooker/baker in general, I can’t cook for shit and everyone knows it. I told my mum that we should do it tonight and she said she was too tired and for me to go ahead. I walked out to the kitchen and started with everything. I first had to crush cookies which took awhile, then I had to put in powdered sugar which my sister thought we had but we didn’t have enough so we had to make more. My mum didn’t know that you can just put normal sugar into a grinder and it makes icing sugar. Then I had to chop up walnuts and mix all of that together, next was mixing booze and corn syrup together then pouring it into all the other stuff and mixing that. I’m a very messy person apparently and while doing this I somehow got rum on me. Next step was the roll the mixture into small balls and roll them into more icing sugar then put them in a container and let them sit for five days. 

I have no idea if they are going to taste good, I have a feeling they are going to be strong but that’s alright. I just really hope they taste good or people won’t eat them and I will feel like shit and will probably never try to make food every again! I will write how they are in five days!
